History of Pav Bhaji

It is believed that the dish has been developed in 1860. During the civil war of America in that period, the demand for cotton was huge. This kept the workers of the Bombay cotton exchange very busy during that time. They often used to come late, and this angered their wives. The food was not served to them.

The local street vendors found the solution, they used to borrow some bread and some leftover vegetables and mix and mash the vegetables and served them with the bread. The bread and the mashup of vegetables later become “Pav” and “Bhaji”. The dish evolved from time to time.

It is widely accepted in every region and has evolved in taste and serving style. Some of the famous variations are Punjabi style and Jain styles versions of the dish.

Pav bhaji Recipe ingredients

Pav bhaji Recipe Step by Step Instructions

Preparing Time: 10 to 15 minutes

Cooking time: 45 minutes to 1 hour

  1. Remove the skin of potatoes with the peeler, wash it nicely and cut the potatoes in 4 pieces
  2. Now take the pieces of potatoes, cauliflower, carrot, capsicum, fresh green peas and add the ingredients in the pressure cooker. Mix the ingredients in water, the water must be of 2 cups. You must cook all the ingredients in the pressure cooker for 10 to 15 minutes
  3. In the meantime, cut the tomatoes in small pieces. It will give a tangy taste to your dish and extreme red color.
  4. While the vegetables are cooking, heat oil in the pan or kadhai and add grated ginger or ginger garlic paste
  5. Then we will add a pinch of hing or you can also say asafoetida
  6. Now you need to add fully chopped onion to it, saute your onion until it becomes very soft but remember don’t make it brown or overcooked
  7. Now add finely chopped tomatoes in the mixture and saute it nicely until oil starts coming out of it
  8. Mash all vegetables with smasher and keep it aside
  9. Take Kashmiri red chili powder, pav bhaji masala and add it into the mixture
  10. Mix it nicely and then add all smash vegetables to this masala
  11. Add half cup of water and boil it
  12. Finally, add 1 tablespoon of butter in the bhaji and stop the boiling process
  13. Serve the bhaji with little butter and with onion, coriander
  14. Serve it with roasted pav in butter with a pinch of pav bhaji masala on it

It is a widely accepted dish. Many culture has explored the dish and has converted them according to their own taste and rituals. Here are some famous styles of Pav Bhaji every foodie must try

Jain Pav bhaji Ingredients

  1. 1 cup of chopped cauliflower or in other words 1 cup of chopped gobhi
  2. 2 chopped raw bananas (potatoes replacement)
  3. 1 cup of chopped bottle guard
  4. 1 cup green peas
  5. 1 cup of water
  6. 2 tbs Amul butter
  7. 1 green capsicum chopped
  8. 5 tomatoes chopped
  9. Jain pav bhaji masala
  10. Salt
  11. 1 tablespoon Kashmiri red chili powder
  12. Coriander leaves

Jain Pav bhaji Step by Step instructions

Pav bhaji is a yummy dish and for those who cannot eat onion, garlic or even potatoes there is an alternative. We proudly present the bhaji for Jains or we can say Jain Pav bhaji.

Cooking time: 50 min to 1 hour

Preparing time: 10 Min

  • First, we will chop some vegetables and add them to the pressure cooker

In this step we will be using 1 cup of chopped cauliflower, it is also known as gobhi. You will also be adding 2 chopped raw bananas, the bananas will play substitute to potatoes, to make the dish a little healthy we will also add 1 cup of chopped bottle gourd. Along with all the vegetables, also add a cup of green peas.

  1. We will stir the mixture with water. After mixing, we will close the lid of the pressure cooker and we will cook the mixture for 4 vessels with high flame
  2. After four vessels, stop the flame and put the pressure cooker on the kitchen shelf and then wait for it to cool down
  3. Take out the pan and add 2 tablespoons of butter, after the butter melts down we will add 1 chopped green capsicum in the melted butter and saute the mixture for few minutes.
  4. Add 5 tomatoes chopped in the mixture, stir the mixture for a few minutes then add dry spices in it, explained in next step
  5. Add pav bhaji masala in it (remember to read ingredients of the packet of The masala, and make sure it does not include any onion and garlic flavor. Add 1 tablespoon Kashmiri red chili powder and add a little bit of salt in the mixture. Stir the mixture for a few minutes.
  6. Cook the mixture and now open the pressure cooker (make sure the cooker is completely cooldown). Take a masher and mash the vegetables in the cooker, make sure they are mashed completely.
  7. Add the mashed vegetables in the tomato mixture present in the pan. Mix the vegetables with the mixture. Remember add the vegetable in chunks.
  8. Add some salt and some coriander leaves on the mixture. This finishes the recipe, now make sure to serve it hot with some pav’s (the recipe of pavs remains the same). Enjoy the Meal!
